Paul Kafasis posted a nice piece on the new blingy OS X GUIs. I guess John Gruber once more was right on time with his HIG observations. Or maybe he even kicked off that trail of thought.
Personally, I don't have a problem with flashy apps, and I think we developers should simplify every app's GUI as much as we can. The UI should dictate the implementation, not the other way round. What I don't like is unusable or unnecessarily limited apps, though. If I have a 23" screen, my apps should better let me use all of that to view a list.
